Tonight we had a taste of what our guests will enjoy for dinner 50 (short!!) days from today.
Everyone will start with a Brookside house salad with sweet cracked peppercorn vinaigrette.
Our chicken choice will be balsamic grilled chicken breast with tomato, basil and fresh mozzarella relish (I think this is what I’m having).
Our beef option will be grilled filet of beef with veal jus.
Both options will be served with (amazing) au gratin potatoes and asparagus with carrot strips.
Our vegetarian friends will have farfalle pasta with white onion, garlic, artichoke, roasted mushrooms, and spinach in a basil pesto cream sauce.
It was fun tasting all of these delicious dishes with our parents and checking a whole slew of decisions off the list.
It’s hard to believe that I’m halfway through my 100 days. I’m not sure I ever believed that I could write a blog a day. But, having made it this far, there’s no going back. Stay tuned…50 blogs to go.
